Bread and egg fry



Ingredients

  • Bread slices - 4
  • Onions - 1-2 (sliced)
  • Tomatoes - 2 (chopped)
  • Curry leaves - few
  • Cumin seeds - 1/2 tsp
  • Sambhar or chilli powder - 1 tsp
  • Oil - 2 tbsp
  • Eggs - 2-3
  • Coriander leaves - few (chopped)
  • Pepper to taste
  • Salt to taste

Method

  • Heat oil to the pan and add cumin. Then add curry leaves, onions and fry till it becomes translucent.
  • Now add tomatoes and fry till it becomes mashy. Add salt and chilly powder.
  • Fry for a minute and then add eggs. Mix well.
  • When the eggs 3/4th done, add the chopped bread pieces.
  • Keep mixing till its done completely.
  • Garnish it with coriander leaves.
  • Sprinkle some pepper while serving.

Tip for the recipe -You can also add little Garam masala. I want to keep it mild. So I didn't add much spice powders. Do not over cook the eggs or else it becomes hard.

Sweet(banana) & hot(chickpeas) sandwich

   
I thought of making a quick sweet & hot bread sandwiches. So bought a canned chickpeas & sandwiches are ready in few minutes. Here is the recipe;

Ingredients for Sweet(banana) sandwich
  • Banana - 1
  • Honey - 1 sp
  • Butter -little to spread
  • White or whole wheat bread slices of your choice

Method
  • Spread butter on the bread slices.
  • Arrange the sliced banana on the bread(buttered side) & pour some honey of top of the bread.
  • Cover it with another slice of bread.
  • Toast it in the sandwich maker or in the grill.

Enjoy.
I have just arranged a single layer of banana. If you want more bananas, add one more layer of banana.

Ingredients for Hot(chickpeas) sandwich
  • Chickpeas - 1 cup(boiled)
  • Chilly powder - 1 tsp
  • Channa masala - 1 tsp
  • Cucumber & Onions (sliced)
  • Butter as required
  • Oil as required
  • White or whole wheat bread slices of your choice

Method
  • Heat some oil in the pan on low flame & add the spice powders(take care, not to burn).
  • Soon add the chickpeas & mix well. Add salt if needed.
  • Arrange some onions & cucumbers on the bread & place the chickpeas masala on top of it.
  • Cover it with another slice of bread.
  • Toast it in the grill using some butter.

I have added more cucumbers for crunchiness. You can adjust it according to your taste.You can also add some mashed potatoes with chickpeas.

Garlic bread



Ingredients
  • Garlic (grated) - 6
  • Butter - 1/2 - 1 cup
  • Parmesan Cheese (finely grated or powdered) - 1/4 cup
  • Bread of your choice - 1 loaf(I used french loaf)
  • Fresh or dried parsley - few

Method
  • Mix garlic, butter & cheese together. Add salt if needed. You may not need salt if the butter is already salted.
  • Spread the butter mixture over the bread(both the sides).
  • Toast the bread in the grill pan. Or preheat the oven at 350 degrees Fahrenheit. Prepare the tray by spraying some oil. Arrange it on the tray & sprinkle some parsley leaves.
  • Roast it till it becomes golden color.
  • Toast the bread if you need a soft garlic bread. If you want it really crispy then go for oven method.

Bread Channa

  



Ingredients

  • Bread slices - 10
  • Channa(chick peas) - 1 1/2 cups
  • Onion - 2 medium size
  • Tomato - 2 medium size
  • Chilly powder - 2 tsp or adjust
  • Readymade channa masala powder(optional) - 1 tsp
  • Garam masala(optional) - 1/2 tsp
  • Oil - 2 tbsp
  • Butter to toast the bread slices
  • Salt to taste


To grind (Group II)

  • Aniseeds - 1 1/2 tsp
  • Khus- khus - 1 tsp
  • Cloves - 2
  • Cardamon - 1
  • Cinnamon - small piece
  • Garlic - 3
  • Ginger - equal to garlic
  • Coconut - 1 1/2 tbsp


To garnish (group III)

  • Chopped onion
  • Chopped  tomato
  • Chopped coriander leaves


Method
  • Soak the chickpeas overnight & cook (with salt) till it becomes soft.
  • Grind the group II ingredients & keep it aside.
  • Heat oil in kadai on high medium flame & fry the onions.
  • Add tomatoes and fry till it becomes mashy.
  • Add salt & spice powders & cook for 2 minutes.
  • Also add boiled chickpeas & mix well.
  • Stir in the grinded masala & add water if needed.
  • Cover & cook till the raw smell leaves the gravy.
  • Remove it from flame, when the gravy becomes thick.

Serving
  • Toast the bread with little butter & spread some channa masala on it.
  • Sprinkle group III ingredients on top of it & serve hot.

Pav bhaji



Ingredients

  • Buns - 6
  • Mixed vegetable (carrot, beans, cauliflower, peas) - 3/4 cup (boiled)
  • Potato - 1 medium size (boiled)
  • Tomato - 2 large (chopped)
  • Onion - 1 medium size (chopped)
  • Aniseed (coarsely powdered) - 1 tsp
  • Ginger-garlic paste - 1 1/2 tsp
  • Red chilly powder - 1 tsp or to taste
  • Green chillies - 2 (finely chopped)
  • Lemon - 1/2
  • Chopped red onions - to garnish
  • Coriander leaves - handful
  • Oil or butter - 1 tbsp
  • Butter - 1 tbsp or adjust to taste
  • Some more butter to toast the buns


Method

  • Toast the buns by adding little butter.
  • Heat oil or butter & fry onions on high -medium flame.
  • Then add ginger-garlic paste & fry well.
  • Add chillies & aniseed powder.
  • Then add the tomatoes & fry till it becomes mashy.
  • Now add the chilly powder & some salt.
  • Add the mashed vegetables & mix well.
  • Pour some water & reduce the flame to low-medium.
  • Stir occasionally, till it reaches the desired consistency.
  • Remove it from flame by adding the lemon juice & coriander leaves.
  • Add the butter & garnish it with red onions.
  • Serve hot with toasted buns.


Tips for the recipe - If you wish to add more butter, then place a cube of butter while serving. Good quality of red chilly powder will enhance the color of the masala. You can also use little tomato paste which also gives good color to the masala.

Thin crust Pizza


               There are three main steps to make good pizza. First one is the base/crust, second is pizza sause & the third is toppings. It is better if you have pizza pan,but you can still make good pizza by using baking tray. This recipe gives you one 12" pizza. I have divided the dough & made one 8" pizza & one 4 " pizza.

Base crust
  • Maida/All purpose flour  - 1 cup
  • Active yeast - 1 tsp
  • Warm water - 1/4 cup + 1 tbsp
  • Olive oil - 2 tsp
  • Salt to taste

Pizza sause
  • Tomato - 2 medium size
  • Garlic (or garlic powder) - 2 finely chopped
  • Tomato sause - 2 tbsp
  • Olive oil - 1 tsp
  • Mortadella cheese - 1 tsp
  • Pepper - 1/4 tsp
  • Basil - 1/4 tsp
  • Oregano - 1/4 tsp
  • Salt - a pinch

Toppings
  • Capsicum - 1/2 cup
  • Onion - 1/2 medium size (thinly chopped)
  • Tomato - 1/2 medium size 
  • Jalapenos - 1
  • Olives - few 
  • Mushroom -1/4 cup (thinly chopped)
  • Pineapple - 1/2 cup (cubed)
  • Mortadella cheese (grated) - 1/2 cup
  • Olive oil - 1 tbsp

Method
For the sause


  • Make a puree out of the tomatoes.
  • Heat oil in the pan on medium flame & add the garlic & fry for few seconds.
  • Now add the tomato puree & mix well for few minutes or until there is no raw smell.
  • Now add all the other ingredients for the sause except cheese.
  • When it starts becoming thick, add the cheese & switch off the flame.

For the crust
  • Add the yeast in quater cup of warm water & allow it to sit for few minutes until you see the foam on top of the water.

  • Now add this to the flour & mix well by sprinkling some salt in your mixing bowl. Also add 1tsp of olive oil.
  • If the dough is very thick add 1 tbsp of water.
  • Finally pour the remaining 1tsp of olive oil on top of the dough to shape a ball.

  • Cover the bowl & keep it in a warm place until the dough doubles (approximately 1 hour).



  • Now punch the dough & cover it again & rest it in a warm place,so that it raises again (this time approximately 20 - 30 minutes).
  • Now nicely grease the 12 inch pan with olive oil & place the dough in it.

  • Slowly spread the dough like a thin layer using your fingers.


For the topping


  • Spread some pizza sause on the flattened dough.
  • Arrange the vegetables one by one as shown.

  • Finally sprinkle some cheese.

  • Drizzle some olive oil on the edges of the crust & also some on the top.
  • Bake it at 425 degree F for 20-25 minutes or till it becomes golden brown in color.
  • Remove it from the pan carefully once it is done.
  • Run your pizza cutter or knife to make pieces & serve hot.

Tips for the recipe - I didn't use olives & mushrooms cause i didn't have any at that time.You can also choose your own topping combos. Adding oil to the edges of the crust will give nice crispy crust.

I made small broccoli pizza & here is the topping recipe.



  • Mortadella cheese (grated) - 1/4 cup
  • Broccoli - 1/2 cup
  • Jalapenos - 1 or 2 to taste
  • Onions - 1/2 small size (thinly chopped)
  • Garlic powder - to taste
  • Olive oil - 1 1/2 tsp

Method - Spread some pizza sause on the flattened dough. Arrange the vegetables (broccoli, Jalapenos & onions). Sprinkle some cheese followed by the garlic powder. Drizzle some olive oil on the edges of the crust & also some on the top. Bake it at 425 degree F for 20-25 minutes or till it becomes golden brown in color.

Bread Roll



Ingredients
  • 2 days old white bread - 6 slices
  • Milk - 3/4 cup
  • Sugar - 1/4 tsp
  • Potato - 1
  • Mixed vegetable - 1/4 cup
  • Onion - 1/2 medium size
  • Green chillies - 3 (chopped)
  • Garlic - 1 (grated)
  • Ginger - equal to garlic
  • Curry leaves - few
  • Chat masala - 1/2 tsp
  • Garam masala - 1/4 tsp
  • Coriander leaves - 2 tbsp
  • Oil - 1 tbsp
  • Salt to taste
Stuffing
  • Boil the vegetables & potato separately by adding little salt.
  • Heat oil in the pan & fry ginger & garlic.
  • Then add curry leaves, chillies & onions.
  • Fry well. Now add the chat & garam masala powder.
  • Then add the mashed vegtables & coriander leaves.
  • Continue to mix till it gets incorporated with the masala.
  • Now the stuffing is ready.
Bread Roll
  • Add sugar to the milk & mix well.
  • Remove the brown edges of the bread and use only the white portion.
  • Now dip the bread in the milk & remove it immediately (approximately for 2-4 seconds, do not dip it for long time) & put it in-between the palms & squeeze out the milk completely.
  • Place the stuffing in the center of the bread slice & cover it with both the sides.
  • Now shape it by gently pressing it. The bread roll should be stiff.
  • Deep fry the rolls on medium flame till it becomes crispy.
  • Serve it with sauce & chutney.
Tips for the recipe
The bread roll should be stiff. There should not be any excess milk in the bread. If you feel the bread rolls are not stiff enough to hold the shape then use clean & wet cloth or tissue towel to remove the excess milk. The rolls can be rolled in the towels till it becomes stiff & slightly dry. Then this can be deep fried.

Chicken Tikka Panni


Ingredients
  • Sandwich bread - Different size of breads are available. I have chosen a longer variety.
  • Chicken tikka Masala - 1 cup (approximately)
  • Sandwich chutney - 2 - 3 tbsp
  • Lettuce - 1/2 - 1 cup (chopped)
  • Red onion - handful of chopped onions
  • Tomato - handful of chopped tomato
  • Chilly powder - 1/4 tsp
  • Chat masala - 1/4 tsp
  • Salt to taste
Method
  • Divide the bread & toast it both the size with little butter. If you are using sliced bread then use 2 slices for one serving.
  • Apply chutney on one side of both the bread slices.
  • Now work with one slice of bread & finally use the other for covering the sandwich.
  • Now place the chicken tikka masala on top of the chutney.
  • Arrange the lettuce, onions & tomatoes over the tikka masala.
  • Sprinkle some salt, chilly powder & chat masala.
  • Cover it with the other bread slice which was filled with chutney.
  • Serve immediately.
Tips for the recipe - Arrange it just before serving. Or else it makes the bread soggy & less tasty. You can adjust the quantity of ingredients to your taste.

Bread Omelette II



Ingredients
  • Eggs - 1
  • Bread slices - 2
  • Milk - 1 tbsp
  • Sugar - 2tsp
  • Salt to taste

Method
  • Break eggs & beat well till it looks like a cream.
  • Mix all the ingredients with the egg except bread.
  • Heat a pan and drizzle some oil on medium flame. 
  • Place both the bread pieces side by side.
  • Pour the egg mixture on top of the bread.
  • Spread it carefully to cover both the bread & bring it to a circular shape.
  • Drizzle some oil.
  • Flip the bread & toast both the sides, till it becomes brown in color.


Tips for the recipe - After flipping the bread pieces also make slashes on the bread. This helps the egg mixture to cook evenly and the center part of the bread is not soggy.

Bread omelette I




Ingredients
  • Eggs - 2

  • Onion - 1 small (finely chopped)
  • Green chillies - 2 (finely chopped)
  • Curry leaves - 1 spring (finely chopped)
  • Ginger - 1/2 tsp (finely chopped)
  • Coriander leaves - 2 tbsp (finely chopped)
  • Salt to taste
Method
  • Break eggs & beat well.
  • Mix all the ingredients with the egg except bread
  • Heat a pan and drizzle some oil. 
  • Give a quick dip to the bread pieces in the egg mixture and put in the pan.
  • Cook it in medium flame.
  • Toast till it becomes brown in color.

Tips for the recipe - Do not dip the bread for a long time in the egg mixture. After flipping the bread pieces also make slashes on the bread.This helps the egg mixture to cook evenly and the center part of the bread is not soggy.

Bread masala fry



Ingredients
  • Bread slices - 6 nos
  • Butter - As reqd
  • Mustard & urad dal - 1/2 tsp
  • Onion - 1 medium size (chopped lengthwise)
  • Tomato - 1 medium size (chopped)
  • Garlic - 3 (finely chopped)
  • Curry leaves - 1 spring
  • Garam masala powder - 3/4 tsp
  • Chilly powder - 3/4 tsp
  • Coriander leaves - 2 tbsp(chopped)
  • Oil - 2 1/2 tbsp
  • Salt to taste


Method
  • Cut the bread slices into bitable size pieces & shallow fry in butter till it becomes golden brown. keep it aside.
  • Heat oil in a pan.
  • Splutter mustard & urad dal.
  • Add garlic, onions & fry till it becomes slightly brown in color.
  • Add tomatoes, chilly powder, garam masala powder and salt.
  • Fry till it becomes mashy.
  • Now add the bread slices and fry till it incorporates with the masala.
  • Garnish with coriander leaves.
