<b>Method</b><br />

<li>Boil the chopped vegetables with some salt and keep it aside.</li>
<li>Add oil to the pan on low heat and ginger -garlic paste.</li>
<li>Fry till the oil separates. Now add onions and fry for a minute.</li>
<li>Then add all the spice powders, little salt and the vegetables.</li>
<li>Mix well. Add coriander leaves and mix it once again.</li>
<li>Allow it to cool completely.</li>
<li>Cut the pastry sheets into desire shapes.</li>
<li>Place the stuffing in the center of the sheet and fold it as such the stuffing is covered completely.</li>
<li>Use little water to seal the edges.</li>
<li>Preheat to oven to 400 degree Fahrenheit and place the prepared pastries and bake it for 20 mints or till becomes slight brown color.</li>

<b>Tips for the recipe</b> - If you are using frozen sheets, thaw it completely. Do not stuff the mixture when it is hot. For best looking puff pastries brush some egg white on top which I didn't do this time.<br />

<li>Fry the chopped capsicum with little oil, till it gets cooked but not soggy or browned. Keep it aside.</li>
<li>Heat oil in the pan on high medium flame. Fry the onions, curry leaves, green chillies, asafoetida & then tomatoes. </li>
<li>Finally add the coconut. Also some salt & tamarind.</li>
<li>Cool & grind everything together to smooth chutney.</li>
<li>This goes well with idly or dosa.</li>

<li>Cover and cook it on low flame. The vegetable will ooze out water.</li>
<li>Stir often till the vegetable in done and becomes dry. Serve it with rice.</li>

<li>Now add pepper, curry leaves, salt and the potatoes. Mix slowly till it gets coated.</li>
<li>Increase the flame to medium and allow the potatoes get roasted.</li>
<li>It may take 10-15 minutes. Mix it every 3-4 minutes till its done. Serve it as a side dish for rice.</li>

I got the recipe from one of the popular tv shows & slightly altered. This is the best eggplant parmesan that i have ever tasted. Here is the recipe;<br />

<li><span style="font-family: Times, Times New Roman, serif;">Bring enough water to boil. Add salt and pasta to it. Cook till the pasta is soft. Now drain the water and keep it aside.</span></li>
<li><span style="font-family: Times, Times New Roman, serif;">Now slightly warmup the cream and mix pasta and the sauce to it.</span></li>
<li><span style="font-family: Times, Times New Roman, serif;">If you need more cheese, then sprinkle it before serving.</span></li>

<li>Heat little oil in the pan & roast the group II ingredients.(Last two ingredients should be added after switching off the stove.Too much of roasting sambhar powder & coconut will spoil the taste of the gravy) Grind the masala & keep it aside.</li>
<li>Heat some oil & splutter mustards.</li>
<li>Now fry the onions for 2 minutes.</li>
<li>Wash the chunks in the running cold water. then squeeze out the excess water. </li>
<li>Add soyas, salt & the masala to the onions.</li>
<li>Mix well & add some water.</li>
<li>Allow the gravy to boil. Remove it from the flame when there is no raw smell.</li>

<li>Add the beetroot & fry well. keep it aside.</li>

<li>In the separate kadai add some oil & roast urad dal, curry leaves, green chillies, asafoetida and finally coconut.</li>
<li>Cool & grind everything together to smooth chutney.</li>
<li>This goes well with idly or dosa.</li>

Now grind it to a smooth paste. Add some more oil to the pan on medium flame & saute ginger & garlic paste. Add the onion-tomato puree. Also add the chicken, aniseed powder, salt & the chilly powder. Fry well till it becomes thick. Now add the mint & coriander leaves & cook for few mints. Switch off the flame when it is done.</span><br />

<li>Tamarind - small gooseberry size</li>
<li>Salt to taste</li>
<li>Oil as required</li>
</ul>

<b>Method</b><br />
<ul>
<li>Heat oil to the pan on high medium flame.</li>
<li>Add all the ingredients except beetroot & coconut.</li>
<li>Fry till the onions turn translucent. Now add the beetroot & fry well. </li>
<li>Keep stirring. It should be at least half cooked. Do not add water.</li>
<li>Now add the coconut & give a quick mix & remove from heat. Don't over fry the coconut.</li>
<li>Cool & grind it to smooth chutney.</li>
<li>This goes well with idly or dosa.</li>

I thought of making a quick sweet & hot bread sandwiches. So bought a canned chickpeas & sandwiches are ready in few minutes. Here is the recipe;<br />

<b>Ingredients for Sweet(banana) sandwich</b><br />
<ul style="text-align: left;">
<li>Banana - 1</li>
<li>Honey - 1 sp</li>
<li>Butter -little to spread</li>
<li>White or whole wheat bread slices of your choice</li>
</ul>

<b>Method</b><br />
<ul style="text-align: left;">
<li>Spread butter on the bread slices.</li>
<li>Arrange the sliced banana on the bread(buttered side) & pour some honey of top of the bread.</li>
<li>Cover it with another slice of bread.</li>
<li>Toast it in the sandwich maker or in the grill.</li>
</ul>

I have just arranged a single layer of banana. If you want more bananas, add one more layer of banana.<br />

<b>Ingredients for Hot(chickpeas) sandwich</b><br />

<li>Chickpeas - 1 cup(boiled)</li>
<li>Chilly powder - 1 tsp</li>
<li>Channa masala - 1 tsp</li>
<li>Cucumber & Onions (sliced)</li>
<li>Butter as required</li>
<li>Oil as required</li>
<li>White or whole wheat bread slices of your choice</li>
</ul>

<b>Method</b><br />
<ul style="text-align: left;">
<li>Heat some oil in the pan on low flame & add the spice powders(take care, not to burn).</li>
<li>Soon add the chickpeas & mix well. Add salt if needed.</li>
<li>Arrange some onions & cucumbers on the bread & place the chickpeas masala on top of it.</li>
<li>Cover it with another slice of bread.</li>
<li>Toast it in the grill using some butter.</li>
</ul>

I have added more cucumbers for crunchiness. You can adjust it according to your taste.You can also add some mashed potatoes with chickpeas.<br />

<li><span class="Apple-style-span" style="font-size: medium;"><span class="Apple-style-span" style="font-family: arial;">Mash the dal (using a masher or 1 or 2 quick turns in the blender) & keep it aside. </span></span></li>
<li><span class="Apple-style-span" style="font-size: medium;"><span class="Apple-style-span" style="font-family: arial;">Heat 1 tbsp of oil in the pan on medium heat.</span></span></li>
<li><span class="Apple-style-span" style="font-size: medium;"><span class="Apple-style-span" style="font-family: arial;">Splutter cumin, coriander seeds, hing & garlic. Fry till the garlic turns golden brown in color.</span></span></li>
<li><span class="Apple-style-span" style="font-size: medium;"><span class="Apple-style-span" style="font-family: arial;">Now add curry leaves, green chillies, onions & salt.</span></span></li>
<li><span class="Apple-style-span" style="font-size: medium;"><span class="Apple-style-span" style="font-family: arial;">Fry till the onions becomes transparent. Now add the mashed horse gram & mix well.</span></span></li>
